You'll see below- but these actually tasted even better after being in the fridge over night! More Pumpkinny! If you can hold out- put in the freezer for a little! I know, easier said than done. At least I have a hard time doing that haha.
**We decided that they tasted even better the next day after being in the fridge all night. They had more of a pumpkin taste. So I recommend doing that!**
We also tried another coconut flour recipe this weekend. Normally we use almond flour- we are more familiar with how it cooks- but decided to try something new so we could use our coconut flour that has been sitting in our pantry. This one also tasted even better after being in the fridge. Maybe that's a coconut flour thing. Coconut flour can be more dry than almond flour. Comments from this one recommended you to put a little coconut milk in it, I didn't have any in the fridge so I didn't, but I could see that it could help them be more moist! I've also seen coconut flour recipes put unsweetened shredded coconut pieces in them. You can also try that if you want!
Try these and let me know what you think! I'll be posting my favorite almond flour recipes soon. We've been through our share of paleo cookies- and my favorite recipe is at home or I would post it now.
But again, remember that this is not true paleo, nor should you do it every day. Yes you are free from real flour and gluten, but they will be higher in calories and fat than you normally eat. So have it be a healthier tasty treat! Enjoy!! :)
