This was something that I threw together and it came out YUMMY! Saves time in the morning and is super healthy! All you need to do is cut out a square and heat it up! Makes a great snack through out the day too.
Eggs, carton of egg whites, Italian sausage, bacon, sweet potatoes, and spinach. - But you choose the ingredients that you like! Any veggies and meat works!
To make clean up easy, I used an aluminum pan. I sprayed with Coconut Oil Spray (can buy at Trader Joes).
Preheat oven to 375. First I shredded the sweet potatoes in the food processor and put them along the bottom of the pan and baked for about 20 minutes.
Then I took out and threw in everything else. Sorry I didn't pay as close of attention as I should have on the amounts. There are about 18-20 eggs (beat in a bowl first), 12 ounces of egg whites (the whole large carton), chopped up 2 Italian sausage, cut up about 4-5 pieces of bacon, and about 1- 1 ½ cups of spinach. No need to pre cook the meat. Just mix it all up and then throw in the oven! I filled the pan about halfway. It does rise a tiny bit, so keep that in mind. I chose a deep pan because I knew I would put a ton in it.
The cooking time will vary depending on how much stuff you throw in there. Mine took about 75 minutes. I would start with 30 minutes and just keep an eye on it. You will know know when its done because when you move it, the eggs will no longer move around in the middle. Enjoy!
