I recently put my business name on my back windshield- it looks so good!! Made by: A Big Difference Signs in St. Louis! Which was motivation to get my blog up and running finally! :) I thought I would start it off with a tasty paleo dish! (Especially since there will probably be a lot of Starting Strength posts coming up since all I am doing is focusing on my cert in December!!). Who said Paleo can't taste awesome?!? This was eggs, peppers, onions, and turkey sausage mixed together. And then on the side Paleo Pancakes! But like I said in the "Where to Start" page, you should not use Almond Flour every morning! But man, it sure is a tasty treat every now and then!
INGREDIENTS 1-1/2 cups of almond flour (or almond meal*) 1/2 cup coconut milk 4 large fresh eggs (whipped) 1 teaspoon baking powder 1 teaspoon cinnamon A dash of salt 1 teaspoon vanilla extract DIRECTIONS 1. Combine almond meal flour, baking powder, cinnamon, and salt. Mix well. 2. Beat eggs. Add to it vanilla extract, coconut milk, and Tofutti non-dairy sour cream. Mix well. 3. Pour liquid into the dry ingredients, and blend together. 4. Drop batter in large spoonfuls on a medium-to hot griddle. Turn each pancake when the bubbles form, and are golden brown on the bottom — 3-4 minutes. This is one of many different recipes out there. My boyfriend said they turn out best when done in the food processor. Enjoy!!
