This will technically be 2 different recipes in one!
Ingredients for the Eggs:
-About half a pound of nitrate free ham
-24 eggs (again, I made a large portion for the week, you can choose how much you want to make)
-Green Onions, chopped
Ingredients for the Pancakes:
-1 3/4 cups of Almond Flour
-1 cup of water
-Optional: spices like cinnamon and nutmeg, vanilla, blueberries or other flavors!
Steps for the Eggs:
1.) Preheat oven to 400 degrees.
2.) Spray each muffin tin with Coconut Oil (I use the one from Trader Joe's).
3.) Line each tin with the ham (I laid it in each compartment like a paper liners for cupcakes).
4.) Crack an egg in each compartment.
5.) Bake for 10-12 minutes (if you like the yolks runnier, then lean more towards the 10 minute mark).
6.) Once it's done, then top with your chopped up green onions.
Steps for the Pancakes:
1.) Mix all ingredients in a medium sized bowl using a blender, hand blender, or a whisk until the batter is a pourable consistency.
2.) Spray the pan with Coconut Oil.
3.) Make one pancake to check for desired thickness and texture.
4.) Cook all pancakes in a griddle or a large pan for about 2-3 minutes on each side until bubbles form and are golden brown.
- You can top with a little syrup, butter, or my favorite- Nutzo Nut Butter from Costco!
