These were so good and very easy! I ate them with a side of my Oven Roasted Brussel Sprouts (those were previously posted on 10/27/14- just search for them in my blog). And the sweet potato slices were also posted recently, but I will add those steps to the bottom! :)
Ingredients for the Pulled Pork:
-Large pork roast (I used an extra large to last me all week)
-1 large onion, sliced
-½ cup green onion, chopped
-3 minced garlic cloves
-2 tsp cumin
-2 tsp chili powder
-1 tsp pepper
-2 tsp oregano
-1 tsp paprika
-1/2 tsp cayenne pepper
-1/2 tsp cinnamon
-2 tsp sea salt
-juice of 1 lime
-juice of 1 lemon
Ingredients for the Sweet Potato "Buns":
-Large Sweet Potatoes (I used 6 so that it lasts me all week and used an extra large Pork Roast from Costco- you decide how much you want to make. The way the spices work, if you run out of spices for a larger amount of meat, it is easy to mix up more!)
Steps for Pulled Pork:
1.) Stir together the spices and rub all over the roast.
2.) Lay the onion slices down on the bottom of the slow cooker, and squeeze half of the fruit juices on top.
3.) Put the roast in the crockpot and squeeze the remaining lime and lemon juices over it.
4.) Cook on low overnight or throughout the day about 8 hours (you really can’t overcook it to be honest).
5.) When done, shred it with two forks until it’s completely ‘pulled’.
Steps for Sweet Potato "Buns":
1.) Preheat oven to 400 degrees.
2.) Wash the sweet potatoes and then cut them into ¼ inch slices.
3.) Grab as many cookie sheets as you need, lay down foil and then spray the sheet with Coconut Oil. (I use the spray from Trader Joe's)
4.) Lay the slices in a single layer on the sheet and drizzle on the melted coconut oil.
5.) Then sprinkle on the spices listed above.
6.) Roast in oven for 20 minutes or until golden brown- you should be able to stick a fork in them.
You can cook the sweet potatoes ahead of time or wait until the meat is ready, up to you! They both re-heat really well. When both are good to go, grab some meat and put in between 2 sweet potato slices. You can drizzle on a little bbq sauce if you want or add some lettuce to the "sandwich."
